The Icelandic sheep is one of the world's oldest and purest breeds of sheep. Throughout its 1100 years of history, the Icelandic breed has been truly triple-purpose, treasured for its meat, fiber and milk. The Icelandic breed is considered a mountain breed, and historically mountain breeds have been milder in flavor and leaner than the lowland and commercial breeds. The meat is undeniably very tender with a mild flavor, and is generally described as gourmet meat. 

At Flying Grouse Farm, we believe there are many benefits to raising animals on a pasture-based diet. First, lambs that forage over a large landscape are eating the way nature intended. Because they graze over long distances in the great outdoors they are lean, fit and healthy. Our lambs have a varied diet that is primarily a mix of pasture grasses and native grasses and the sheep are rotated to new pastures in order to provide the most nutrient-dense forage to their diet.
